Day to day: the potato experiment

As I’m now tracking remission, and I’ve already reintroduced pasta and rice into my diet, I’ve experimented with potatoes.

We used to have potato wedges and burger on Friday dinners. Tradition at home for many years. So today we tried it again for the first time in about 10 months.

First, as it’s good protocol, I had a simple salad of lettuce, rocket, courgette, and fried onions.

Then I had vegan burger (wheat-based, just to challenge my pancreas a bit more), avocado, and home-made wedges (oil fried).

The resulting glycaemia curve was as follows:

As you can see, The peak was 117mg/dl at 1 hour. Back down to 107 at 1.5 hour. So we can hardly talk of a spike. As hoped, by body is now behaving normally toward starch.
