A lot of people seem to be at a loss about what they can cook that wouldn’t send their glycaemia spiraling up. I’m lucky in that my wife like cooking and is in charge of my food. I don’t need to worry and I get diabetes-friendly meals. So, I will post days of food and glucose readings once in a while.
Here is Friday:
Breakfast was 2 eggs and black coffee (no sugar of course). I’ve gone through a number of breakfast menus and I try to alternate.
Lunch was vegetable soup with cheese. Cheese for desert (I have to, it’s compulsory).
Dinner was a Buddha bowl.
For desert, we made homemade diabetic friendly mocha frappuccino.
Later on, I had a few nuts.
