Recipe: Herbie Mini Roll


  • 120g of Almond Flour
  • 70g of psyllium husk
  • 35g of coconut flour
  • 1 teaspoon of salt
  • 2 teaspoons of baking soda
  • Add desired herbs/spices
  • 1 cup of boiling water
  • 1 tablespoon of olive oil
  • 1 tablespoon of apple cider vinegar


  1. Pre heat the oven at 200C.
  2. Add the dry ingredients together in a bowl and mix well.
  3. Add the cup of boiling water, olive oil and apple cider vinegar and mix well.
  4. Kneed for 5 minutes.
  5. Portion out into 6 balls, and shape into desired shape. Put on baking sheet with grease proof paper.
  6. Cook for 35-40 minutes.
  7. Cool on cooling rack. 

As part of a meal of celeriac and curried cauliflower soup, with cheese for desert, the impact was minimal with a global +12mg/dl increase 1.5 hour after the meal.
