Ingredients:
- 120g of Almond Flour
- 70g of psyllium husk
- 35g of coconut flour
- 1 teaspoon of salt
- 2 teaspoons of baking soda
- Add desired herbs/spices
- 1 cup of boiling water
- 1 tablespoon of olive oil
- 1 tablespoon of apple cider vinegar
Method
- Pre heat the oven at 200C.
- Add the dry ingredients together in a bowl and mix well.
- Add the cup of boiling water, olive oil and apple cider vinegar and mix well.
- Kneed for 5 minutes.
- Portion out into 6 balls, and shape into desired shape. Put on baking sheet with grease proof paper.
- Cook for 35-40 minutes.
- Cool on cooling rack.
As part of a meal of celeriac and curried cauliflower soup, with cheese for desert, the impact was minimal with a global +12mg/dl increase 1.5 hour after the meal.
